  • 8 oz cream cheese or mozzarella for creaminess
  • 2 cups spinach fresh or thawed frozen
  • 1 cup mushrooms chopped
  • 2 cloves garlic
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp fresh basil or parsley for freshness
  • Optional bacon or diced ham for additional richness

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté chopped mushrooms until golden. Add spinach and cook until wilted. Mix in garlic, cream cheese, and herbs. Season to taste.
  3. Gently cut each chicken breast in half, creating a pocket. Avoid cutting all the way through.
  4. Generously fill each pocket with the filling, then secure with toothpicks if needed.
  5. In a hot skillet with oil, sear the chicken breasts for 2–3 minutes on each side until golden.
  6. Transfer to the oven and bake for about 25-30 minutes or until cooked through (internal temp of 165°F/74°C).
  7. Allow to rest for a few minutes before slicing. Pair with your favorite side dish for an exquisite experience.
