Preparation

- In a large bowl, whisk together the eggs, sour cream, and granulated sugar until smooth and creamy.
- Incorporate the mashed sweet potato into the egg mixture until there are no lumps.
- Add the ground spices and salt to the bowl, mixing well until everything is combined.
- Drizzle in the vegetable oil while whisking until thoroughly combined.
- Fold in the flour and baking powder with a rubber spatula until just combined, being careful not to overmix.
- Gently fold in the pecans and golden raisins until evenly distributed.
Baking
- Transfer the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 60 to 70 minutes or until a toothpick inserted comes out clean.
- Allow the loaf to cool completely on a rack before icing.
Icing and Serving
- Mix powdered sugar with 4 teaspoons of milk, adding more milk as necessary until it reaches a runny consistency.
- Drizzle the icing over the cooled loaf and sprinkle with toasted chopped pecans.
- Slice the bread and serve it plain or with butter or cream cheese.
