Ingredients
  

Wet Ingredients
  • 2 large eggs
  • 2 Tbsp. sour cream
  • 1 cup granulated sugar
  • 1 cup mashed sweet potato
  • 1/2 cup vegetable oil
  • 4 to 6 tsp. whole milk
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground allspice
  • 1/2 tsp. ground cloves
  • 1/4 tsp. kosher salt
Add-ins and Toppings
  • 1 cup pecans
  • 1/2 cup golden raisins
  • 1/2 cup powdered sugar
  • 1/4 cup chopped pecans, toasted

Method
 

Preparation
  1. Preheat your oven to 350 degrees Fahrenheit and coat a 9-inch by 5-inch loaf pan with nonstick spray.
  2. In a large bowl, whisk together the eggs, sour cream, and granulated sugar until smooth and creamy.
  3. Incorporate the mashed sweet potato into the egg mixture until there are no lumps.
  4. Add the ground spices and salt to the bowl, mixing well until everything is combined.
  5. Drizzle in the vegetable oil while whisking until thoroughly combined.
  6. Fold in the flour and baking powder with a rubber spatula until just combined, being careful not to overmix.
  7. Gently fold in the pecans and golden raisins until evenly distributed.
Baking
  1. Transfer the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 60 to 70 minutes or until a toothpick inserted comes out clean.
  3. Allow the loaf to cool completely on a rack before icing.
Icing and Serving
  1. Mix powdered sugar with 4 teaspoons of milk, adding more milk as necessary until it reaches a runny consistency.
  2. Drizzle the icing over the cooled loaf and sprinkle with toasted chopped pecans.
  3. Slice the bread and serve it plain or with butter or cream cheese.

Notes

For best results, use room temperature ingredients and replace half of the oil with melted butter for added richness.
